Potato Soup

Serves: 3


4 big potatoes

½ cup finely chopped spring onion whites

½ cup finely chopped spring onion greens

2-3 cloves of garlic

½ inch piece of ginger

1 teaspoon ground black pepper

½ lemon


1 teaspoon butter



Remove the skin of potatoes and boil in 3 glass of water. Add garlic cloves and ginger while boiling. Let it cool slightly. Blend it with a blender or in a mixer.

Take a pan and heat butter. Add spring onion whites and sauté it for about 2-3 minutes till it turns light brown. Add potato soup, salt, pepper, lemon juice and let it simmer for about 5-8 minutes.

Garnish it with spring onion greens and serve it hot with bread or rice.
