Tortilla Soup

Tortilla Soup

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Serves: 4


4 corn tortillas

3 cup chopped tomatoes

1 cup finely chopped onions

¼ cup finely chopped spring onions

1 tablespoon minced garlic

5 cup vegetable stock or water

½ cup grated cheese

1 red pepper/cayenne pepper

1 cup finely chopped zucchini/cucumber

1 tablespoon oil/butter

1 teaspoon ground black pepper

1 teaspoon cumin powder



Take a pan and heat butter. Add onions and garlic and sauté it for a minute or two. Add tomatoes, zucchini, red pepper and sauté it for a minute. Add vegetable stock and let it come to boil. Add salt, pepper and cumin powder and boil it for about 5 minutes till vegetables soften. Add spring onion and cook it for about a minute more.

For serving - Cut tortillas into strips and deep fry it. Take half of it and arrange into 4 bowls. Add soup. Top it up with remaining tortilla strips, spring onion greens and grated cheese.

Serve it immediately.
