![]() Preparation Time: 30-40 minutes Serves: 3 Ingredients 3 big brinjal/eggplant/aubergine 4 tablespoon tahini 4 garlic cloves 4 tablespoon olive oil 3 -4 tablespoon lemon juice 1 teaspoon roasted cumin powder 2 tablespoon chopped parsley 1 tablespoon ground black pepper 1 teaspoon red chilly powder (optional) Salt Method Eggplant can be grilled or roasted on the gas stove. Prick eggplant with a fork. Roast it for about 20-25 minutes turning frequently till the skin blackens and it becomes soft. You can even roast it for 5-7 minutes on the gas stove and then grill it in the oven. Pre heat oven to 400 degrees F (200 degrees C) and grill on the rack for about 10 minutes. Check it in between. Put it in the water and let it cool. Peel off the skin. Add tahini, garlic, lemon juice to eggplant and blend it well with a blender. Add salt, cumin powder, olive oil, pepper, chilly powder and mix it well. Garnish it with parsley, olive oil and serve it with pita bread. |
