Tindora (Ivy Gourd) Pickle

Preparation Time: 20 minutes


Ingredients

1 cup slices of tindora (Ivy Gourd)

3 teaspoon mustard seeds powder/rai kuria (coarsely ground)

1 teaspoon fenugreek seeds powder/methi kuria (coarsely ground)

3 teaspoon red chilly powder

½ teaspoon turmeric powder

3 tablespoon oil

2 lemons

Method

Take oil and warm it on the gas stove. Let it cool. Do not mix hot oil in the masala/spices.

Take a bowl, add tindora, mustard powder, fenugreek powder, red chilly powder, turmeric powder, salt and mix it well. You also get mustard and fenugreek powder readymade in the market.

Add lemon juice and oil in the mixture and mix it well. Let it set for 1 day. On the second day stir it properly to mix the masala/spices. Stir it once, everyday with a dry spoon. You can use it on the third day.
