Preparation Time: 10 minutes Cooking Time: 10 minutes Serves: 3 Ingredients 1 cup potato wedges 1 cup tomato wedges 1/2 cup brinjal wedges 1 cup cucumber wedges 2 teaspoon olive oil 1 teaspoon ground black pepper 2 teaspoon oregano Salt Mint leaves for garnishing Method Take a microwave proof dish. Add all the vegetables, salt pepper, olive oil, mix it and grill it for 10-12 minutes, till it is slightly crispy. Sprinkle oregano and garnish it with mint leaves.
