Potato with veggies
Preparation Time: 15 minutes Cooking Time: 20 minutes Serves: 3 Ingredients 3 big potatoes 1 cup peas 1 cup finely chopped carrots 1 cup finely chopped tomatoes 1 cup finely chopped cucumber 1 cup finely chopped capsicum/bell peppers 10-12 mint leaves 4 tablespoon oregano 2 teaspoon ground black pepper 1 teaspoon lemon juice Salt 4 tablespoon olive oil
Method Peel potatoes and dip into water. Cut into horizontal slits but only through half way. Sprinkle salt, pepper and 2-3 drops of olive oil on each potato and spread it evenly. Preheat oven and grill it for about 10 minutes. Take it out and sprinkle oregano and 1-2 drops of oil and grill it again till it becomes light brown and crispy. Till then, make sautéed vegetables. Take a pan and heat 2 tablespoon of oil. Add peas, carrots, cucumber, bell peppers and sauté it till it is almost done. Add tomatoes, cut half mint leaves with hands. Add salt, oregano, black pepper, lemon juice and cook it for a minute. For serving – Take a plate. Put sautéed vegetables in three plates equally. Arrange grilled potatoes in each plate. Sprinkle oregano and garnish it with mint leaves and serve. You can add cream if you like it. |
