Vegetable Cupcakes

Cooking Time: 15 minutes

Soaking Time: 2 hours

Serves: 3


1 cup besan(gram flour)

½ cup rava/suji/semolina

1 cup curd

¼ teaspoon turmeric powder

½  teaspoon red chilly powder

1 finely chopped green chilly

½ teaspoon sugar (optional)

1 teaspoon baking soda

½ cup par boiled peas

½ cup finely chopped apples

¼ cup grated bottle gourd

1 teaspoon of lemon juice



Take a bowl. Add besan, rava, curd and mix it well. If it is too thick add ¼ cup of water. Soak it for 2 hours.

Add salt, turmeric powder, red chilly powder, green chilly, sugar, soda, lemon juice and mix it well. Add peas, apples, bottle gourd and mix it well. The mixture should be of dropping consistency. It is too thick add water.

Grease cupcakes with oil and fill up the mixture till ¾ cup. Don’t fill up full as it will raise when you bake it.

Bake it for 10-12 minutes. Insert knife to check if it is done. If it comes out clean it is done, otherwise bake it for 2-3 minutes more.

Take it out from moulds and serve it warm with green chutney or tomato ketchup.
