Add water as per the need while making dosa. You can even use readymade batter.
Par boil potatoes, carrots, peas and beetroot. Take kadai and heat oil. Add onions and sauté it for 2-3 minutes. Add capsicum, salt, pepper and sauté it for 1-2 minutes. Add par boiled vegetables and cook it for about 2-3 minutes. Slightly crush the vegetables.
Take non-stick tawa and heat it. Add oil and pour 1-2 tablespoon of batter and spread it in circular motion evenly to make thin dosa and cook it on one side. Turn it on the other side. Spread vegetables mix and roll it or cut it into half and make a cone.
Serve it hot with green chutney or tomato ketchup. Children love dosa and using different vegetables for stuffing helps in giving those vegetables they usually avoid to eat.
