Ragi-Vegetable Pancake

Ragi-Vegetable Pancakes

Serves: 3


2 cups ragi flour(Nachani, Eleusine coracana, finger millet)

2 tablespoon rice flour

1/2 cup curd/yogurt

1/2 cup grated potatoes

1/2 cup grated cauliflower

1/4 cup finely chopped onions (optional)

2 tablespoon grated ginger

4-5 finely chopped green chillies

2 tablespoon ground black pepper

2 tablespoon chaat masala





Peel the skin of potato and grate it. Grate cauliflower and keep it aside. Finely chop onions.

Take a bowl. Add ragi flour, rice flour, vegetables, ginger, chillies, salt, pepper, chaat masala and mix it well. Add curd and mix it well. Add water as per the need to make thick batter. 

Take a non-stick tawa/griddle and heat it. Add 1/4 spoon of oil and pour a ladle full of batter and spread it evenly. It will be slightly thick due to vegetables. Pour few drops of oil on the edges if there is a need. Cook on both the sides on the medium flame. You can even close it with a lid. 

Prepare all the pancakes like this. Serve it hot with any chutney or ketchup.
