Rice-Vegetable Bars

Rice-Vegetables Bars

Serves: 4


Ingredients

1 ½ cup of rice flour

1 cup curd/yogurt

1 cup peas

½ cup finely chopped carrots

½ cup finely chopped beetroot

½ cup fenugreek leaves

5-6 finely chopped cloves of garlic

2 teaspoon of ginger paste

5-6 green chillies

1 teaspoon of cumin seeds

1 teaspoon of oil

1 teaspoon of soda bi carb

Method

Take a pan and heat oil. Add cumin seeds and all the vegetables. Saute it for 1-2 minutes. Add salt, green chillies, garlic, ginger and sauté it for a minute more. Add 2 glass of water. Let it boil for some time. Switch off the gas stove. Add curd and mix it well.

Slowly, add rice flour and stir continuously to avoid lumps. Add some water if it is very dry. Keep the batter thick. It should be like a soft dough.

Take a microwave safe bowl. Grease the bowl with oil and spread the batter into it. Bake it for 10-12 minutes, till it is done. Check it by inserting the knife in it, if it comes out clean then it is ready, if not then bake for 1-2 minutes more.

Cut into long bars. Serve it hot with green chutney
