2 cup couscous
1 cup finely chopped spinach
1/2 cup finely chopped capsicum/bell pepper
1/2 cup finely chopped spring onions
¼ cup peas
1 teaspoon ground black pepper
1 teaspoon green chilly paste
2 tablespoon butter/olive oil
Take 3 ½ cup of water and boil it. Take a bowl, add couscous and pour the boiling water on it. Close it with a lid and let it set for 5 minutes or till the water is absorbed. Take a fork and fluff it up.
Add ¼ cup of water to spinach and blend it to make puree.
Take a pan and heat butter. Add onions and saute it for few minutes. Add peas, spinach puree and cook it till it is almost done. Add salt, green chilly paste, pepper and mix it well.
Add couscous and mix it well. Cook it on slow flame for about a minute or two.
Serve it immediately with any curry, curd or soup.
