Vegetable Couscous

Vegetable Couscous

Preparation Time: 15 minutes

Cooking Time : 10 minutes

Serves: 4

Ingredients

2 cup couscous

1 cup chopped carrots

1/2 cup finely chopped spinach

1/2 cup finely chopped capsicum/bell pepper

1/2 cup finely chopped onions

1 teaspoon ground black pepper

1 teaspoon red chilly powder

Salt

2 tablespoon butter/olive oil


Method

Take 3 1/2 cup of water and boil it. Take a bowl, add couscous and pour the boiling water on it. Close it with a lid and let it set for 5 minutes or till the water is absorbed. Take a fork and fluff it up.

Take a pan and heat butter. Add onions and saute it for few minutes. Add carrots, capsicum, spinach and cook it till it is almost done. Add salt, red chilly powder, pepper and mix it well.

Add couscous and mix it well. Cook it on slow flame for about a minute or two.

Serve it immediately with any curry or soup.
