Beans Corn Rice

Preparation Time: 10 minutes

Cooking Time: 10 minutes

Serves: 3

Ingredients

1 cup cooked rice

½ cup boiled corn kernels

½ cup boiled rajma beans/kidney beans

¼ cup finely chopped capsicum

¼ cup tomato puree

¼ cup finely chopped onions

½ teaspoon ginger paste

1 teaspoon oregano

1 teaspoon ground black pepper

1 teaspoon chat masala

Salt

2 tablespoon oil


Method

Take a pan and heat oil. Add onions, ginger paste and sauté it for about 2-3 minutes. Add tomato puree, salt, oregano, black pepper, chat masala and sauté it for about 2-3 minutes more. 

Add corn, rajma and mix it well. Finally add rice and mix it well. Cook it on a low flame for about 2-3 minutes stirring occasionally.

Serve it immediately with curd or soup.
