Bengal Gram Rice with Sauteed Vegetables

Bengal Gram Rice with Sauteed Vegetables

Preparation Time: 20 minutes

Cooking Time: 15 minutes

Soaking Time: 5-6 hours

Serves: 4


Ingredients

For Rice

2 cup rice

½ cup Bengal gram

½ teaspoon ground black pepper

Salt

2 teaspoon ghee (clarified butter)

For Vegetables

1 cup julienne of cucumber

1 cup julienne of carrots

½ cup julienne of raw mango

Salt

1 teaspoon ground black pepper

1 teaspoon lemon juice (optional)

2 tablespoon oil/ghee/butter

 

Method

Soak Bengal gram for 5-6 hours. Par boil it and keep it aside.

Boil rice, drain water and keep it aside.

Take a pan and heat ghee. Add Bengal gram and sauté it for 2-3 minutes. Add salt, pepper, rice and mix it well. Cook it for 2-3 minutes on low flame and keep it aside.

For Vegetables

Take a pan and heat ghee. Add carrots, salt and sauté it for 3-4 minutes. Add raw mango and cucumber, salt for raw mango and cucumber as we have already added previously, pepper and sauté it for 3-4 minutes, till it is done.

Add lemon juice and mix it well. 

Add it to the rice and serve it immediately with any soup or raita.
