Carrot-Capsicum Rice

Carrot-Capsicum Rice

Preparation Time: 20 minutes

Cooking Time: 10 minutes

Serves: 3


2 cup cooked rice

1 cup carrot puree

1 cup finely chopped capsicum/bell pepper (red, yellow, green)

1 teaspoon ground black pepper


1 teaspoon ghee/clarified butter

Mint leaves for garnishing



Boil rice, drain water and keep it aside.

Par boil carrots, add 1/4 cup water and blend it to make puree.

Take a pan and heat ghee. Add carrot puree, salt, pepper and cook it for about 1-2 minutes. Add capsicum and cook it for about 2 more minutes. Add rice and mix it well. Cook for about 1-2 minutes so that it mixes well.

Garnish it with mint leaves and serve immediately.
