Carrot-Corn Pulav(Rice)

Corn-Carrot Pulav

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Soaking Time: 1 hour

Serves: 3


1 cup rice

1 cup boiled corn kernels

1 cup grated carrots

1/4 cup finely chopped onions (optional)

1 teaspoon ginger paste

1/2 cup finely chopped capsicum/green bell pepper

3-4 finely chopped green chillies

1/4 teaspoon turmeric powder

4-5 cloves

A pinch of asafoetida


2 teaspoon ghee (clarified butter)


Soak rice in water for 1 hour. This helps the grain to grow big and it cooks fast.

Take a pan and heat ghee. Add cloves, asafoetida, ginger and stir it for 2-3 times. Add onions and saute it for 3-4 minutes till it turns translucent. Add corn, carrot, salt, turmeric powder, green chillies, capsicum and mix it well. Let it cook for 1-2 minutes. 

Drain water from rice and add it. Add 1 cup of water and let it boil.Close the lid and let it cook on a medium to low flame till it is done. Stir it once very softly with a spatula. Add water if there is a need. Water measurement differs as per the quality of rice. Separate it with a fork after it is done.

Serve it hot with curd, raita or curry.
