![]() Mexican Rice Preparation Time: 20 minutes Cooking Time: 15 minutes Serves: 3 Ingredients 2 cup basmati rice 1 cup boiled rajma beans (kidney beans) ½ cup shredded cabbage ½ cup finely chopped spring onions 2 teaspoon finely chopped green chillies/green bell peppers 2 teaspoon ginger-garlic paste 2 teaspoon red chilly powder 3 tablespoon tomato puree 1 teaspoon oregano 1 teaspoon ground black pepper 1 1/2 cup water/vegetable stock Salt Oil Method Take a frying pan and heat oil. Add ginger-garlic paste, green chillies, spring onions and shredded cabbage and sauté it for 4-5 minutes. Add salt, red chilly powder, pepper, tomato puree, rice, rajma beans and saute it for 1-2 minutes. Add water and let it come to boil. Cook it on low flame till rice is done. Serve it hot. |
