Soybean Rice

Cooking Time: 15 minutes

Soaking Time: 30 minutes

¾ cup soybean chunks

2 cup rice

1 cup tomato puree

½ cup finely chopped onions

¼ cup finely chopped capsicum/green bell pepper

1 teaspoon garlic paste

1 teaspoon ginger paste

1 teaspoon red chilly powder

5-6 mint leaves


2 tablespoon oil


Cook soybeans chunks as per the instructions on the packet. Soak rice for 30 minutes. Cook rice, drain water and keep it aside. Don’t overcook it as it will be cooked with soybeans also.

Take a pan and heat oil. Add onions and sauté it till it turns translucent. Add ginger-garlic paste, tomato puree, capsicum and sauté it for about 2-3 minutes.

Add salt, red chilly powder, finely chopped mint leaves, rice and mix it well. Cook it for about 2 minutes on low flame.

Serve it immediately.
