Vegetable Biryani (Vegetable Rice)

Vegetable Biryani (Vegetable Rice)

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Soaking Time: 1 hour

Serves: 4

Ingredients

2 cup rice

1 cup peas

½ cup finely chopped carrots

½ cup finely chopped French beans

¼ cup finely chopped brinjal

½ cup finely chopped potato

½ cup finely chopped onions

3 tablespoon biryani masala

1 teaspoon turmeric powder

2 teaspoon garlic paste

2 teaspoon ginger paste

4-5 finely chopped green chillies

2 cups of water

1 teaspoon cumin seeds

2-3 bay leaves

3-4 cloves

1 small piece of cinnamon

2-3 cardamom

Salt

3 tablespoon ghee (clarified butter)

 

Method

Soak rice in water for about 1 hour.

Take a pan and heat ghee. Add cumin seeds and let it crackle. Add bay leaves, cloves, cinnamon, cardamom, ginger-garlic paste, green chillies and stir it for 2-3 times. Add onions and sauté it for 2-3 minutes till it becomes translucent. Add vegetables, salt, turmeric powder, biryani powder and sauté it for 2-3 minutes. Add 2 cups of water and let it come to the boil.

Drain water from rice and keep it aside. Add rice to the vegetables when the water comes to the boil. Close the lid and let it cook on a medium flame, stirring occasionally with a spatula. Cook it till it is done, add water if needed.

Serve it immediately with curd or raita.
