Bhaleri Bhindi (Ladies Finger)

Ingredients

250 grams ladies finger (bhindi)

½ cup besan

2 teaspoon sugar

Salt to taste

1 teaspoon garam masala

3 teaspoon red chilly powder

2 teaspoon turmeric powder

1 teaspoon mustard seeds

1 teaspoon cumin seeds

A pinch of asofoetida

Oil


Method 

Roast besan in wok(kadai) on a low flame. You can even do it in microwave for 3-4 minutes. Let it cool. Add salt, sugar, garam masala, 1 teaspoon turmeric powder, 2 teaspoon red chilly powder and mix it well.

Cut bhindis from top and bottom. Make slits in bindis but be careful that it does not cut into two pieces. Fill in the mixture of besan into all the bhindis and keep it ready.
Take a frying pan and put some oil into it. Temper it with mustard seeds, cumin seeds and asafoetida and put all the bhindis into it. Add 1 teaspoon of red chilly powder, 1 teaspoon of turmeric powder and salt so that the spices are on the outer side of the bhindis also.  Stir it and sprinkle some besan on the top also. Cover the pan and cook it on low flame.

You can even cook it in the microwave oven for 10 minutes. Garnish it with coriander leaves and serve hot.
