![]() Preparation Time: 10 minutes Cooking Time: 15 minutes Serves: 3 Ingredients 2 cup brinjal slices 1 cup coconut powder 1/4 cup roasted peanuts 1 cup curd/yogurt 1/2 teaspoon garlic paste 1/2 teaspoon ginger paste 2 teaspoon green chillies paste 1 teaspoon cumin seeds Salt 2 teaspoon oil Coriander leaves for garnishing Method Take a bowl filled with water. Cut the top of brinjal and cut into ¼ inch slices. Keep it in water to protect it from turning black. Take a pan and heat oil. Add cumin seeds and let it crackle. Add brinjal slices and shallow fry it till it turns brown on both the sides. Till then, make coconut-peanuts gravy. Take coconut powder, peanuts, curd and grind it to make gravy. Add about ¼ cup water to make it into thin consistency. Add garlic-ginger paste, green chillies, salt to fried brinjal and mix it well. Add gravy and cook it for about 4-5 minutes. Add some water if necessary to cook it well. Garnish it with coriander leaves and serve it with roti, paratha or rice. |
