Cauliflower Carrot in Spinach Gravy

Cauliflower-Carrot Vegetable in Spinach gravy

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serves: 2


1 cup cauliflower florets

1 cup finely chopped carrots

1 cup spinach puree

¼ teaspoon grated ginger

1 teaspoon green chillies paste

1 teaspoon lemon juice

1 teaspoon cumin seeds

A pinch of asafoetida


2 teaspoon oil



Take a pan and heat oil. Add cumin seeds and let it crackle. Add asafoetida, green chillies paste and stir it for 2-3 times. Add carrots, cauliflower florets and mix it well. Add little salt and water and let it cook till it is half done. Close the lid and let it cook. Add more water if necessary.

Add grated ginger, lemon juice, spinach puree and cook it till it is done. Add more water as per the consistency of gravy you want. .

Serve it with roti, paratha or rice.
