Soybeans Fenugreek Vegetable

Soaking Time: 8 hours

1 1/2 cups soybeans

2 cup fenugreek leaves

1 cup curd

2 tablespoon melon seeds

2 tablespoon fresh cream

¼ cup spring onions whites

2 teaspoon garlic paste

1 teaspoon ginger paste

3 teaspoon green chillies paste

2 tablespoon oil


Spring onions greens for garnishing


Soak soybeans in water for 8 hours. Pressure cook it for 7-8 whistles in 4 glass of water. Drain water and keep it aside. Don’t throw away water.

Soak melon seeds in ½ cup of water for 15-20 minutes. Blend it to make paste.

Take a pan and heat oil. Add ginger, garlic, green chillies paste and stir it. Add spring onions and sauté it till it becomes translucent. Mix fenugreek leaves, boiled soybeans and salt and cook it for 4-5 minutes. Add melon paste, curd and 1 cup of soybean water (which is reserved) and cook it for 5-6 more minutes. Add fresh cream and cook it for 2 minutes. Add more water as per the gravy you want.

Garnish it with spring onions greens and serve it with roti, paratha or garlic bread.
