![]() Spinach-Potato -Brinjal Preparation Time: 15 minutes Cooking Time: 15 minutes Serves: 3 Ingredients 3 potatoes 4-5 brinjals 1 1/2 cup finely chopped spinach 1/4 cup finely chopped tomatoes 1 teaspoon garlic paste 2 teaspoon red chilly powder 1 teaspoon turmeric powder 1 teaspoon cumin-coriander powder 1 teaspoon mustard seeds 1 teaspoon cumin seeds A pinch of asafetida Salt Oil Method Cut potatoes and brinjal into small pieces. Take a pan and heat oil. Temper it with mustard seeds, cumin seeds, asafetida, garlic paste and stir it for 2-3 times. Add potatoes, 4-5 tablespoon of water and cook if for about 3-4 minutes. Add brinjal and again cook it for 4-5 minutes. Add spinach, tomatoes, salt, red chilly powder, turmeric powder, cumin-coriander powder and cook it for about 5 more minutes or till it is done. Serve it hot with chappati or parathas. |
