Basbousa/Revani (Egyptian Recipe)

Preparation Time: 10 minutes

Cooking Time: 25-30 minutes

Serves: 5


1 cup rava/semolina

¼ cup maida (all purpose flour)

½ cup coconut powder

½ cup curd/plain yogurt

1 teaspoon vanilla essence

100 gram butter

½ cup powdered sugar

¼ cup milk (use as per the need)

½ cup blanched almonds

For Syrup

1 cup water

½ cup sugar

½ teaspoon lemon juice

1 teaspoon rose water



Take a bowl. Add rava, maida, coconut powder, sugar and mix it well.

Take another bowl, add melted butter, curd, vanilla essence and whisk it well. Add it to the powder mix and whisk it again. If it is hard add some milk.

Take a pan and boil almonds in water for about 5 minutes. Let it cool slightly, remove the skin and keep it aside.

Take a baking tray and pour the mixture. Let it set for 5 minutes. Cut it horizontally and vertically to make diamond shape with a knife. Put one almond on each diamond and slightly press it.

Pre heat oven, bake at 200 degree C for 25-30 minutes, or till it is done. After 25 minutes check it by inserting the knife in it, if it comes out clean then it is ready, if not then bake for 5-7 minutes more. Bake it till it is light brown.

Till then, prepare sugar syrup. Take a pan, add water, sugar, lemon juice, rose water and boil it. Keep it aside.

Take out the tray when it is baked. Pour sugar syrup on it and let it cool slightly.

Take out the diamond pieces and serve it.
