Mango Shrikhand (Amrakhand)

Mango Shrikhand (Amrakhand)

Preparation Time: 20 minutes

Dripping Time: 3-4 hours

3 cups curd/yogurt

1 ½ cups mango puree

1 cup sugar

2 teaspoon cardamom powder

A few strands of saffron

2 teaspoon of milk

Almonds and pistachio for garnishing



Put the curd in a muslin cloth, tie the cloth and hung it for 3-4 hours so that all the water (whey) is dripped out from the curd. Put the bowl under the cloth as the whey will come out. You can even put it in the refrigerator so that it remains cold.

Chop the mangoes and make the puree.

Take milk in a bowl and soak saffron strands in it.

Take a bowl. Add thick curd, mango puree, sugar, saffron with milk, cardamom powder and whisk it well with a spoon or blender. Amount of sugar depends upon the sweetness of mangoes and as per your likeness.

Keep it in the refrigerator to cool it.

Garnish it with almonds and pistachios and serve it immediately. You can even add finely chopped mango pieces if you like it.
