Rava-Pineapple Cake

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Setting Time: 4-5 hours

Serves: 4

Ingredients

1 cup rava/suji/semolina

1 cup milk

1 cup sugar

½ cup powdered sugar

1 cup fresh cream

3-4 teaspoon pineapple syrup

1 teaspoon cardamom powder

3 tablespoon ghee/clarified butter

Cherries for decoration

Method

Take a bowl, add fresh cream, powdered sugar, pineapple syrup and mix it well. Keep it in the refrigerator for setting.

Take a kadai/pan and heat ghee. Add rava and sauté it for about 7-8 minutes till it turns light brown. Add milk, 1 cup water, sugar and cardamom powder and cook it for few more minutes till ghee leaves the side of the pan. If it becomes too dry add some more water to make rava shiro/suji ka halwa.

Take a dish and pour rava halwa in the ring mould. Spread it evenly. Let it cool for some time. Take out the fresh cream from the refrigerator and pour it on the top of rava mix. Decorate it with cherries.

Put it in the refrigerator for 4-5 hours to set, or till it sets. Slowly take out the ring and cut into pieces and serve it cold.
