1 or 1½ cups of chopped coriander leaves
2 cups of besan - chickpea flour
½ teaspoon turmeric powder
½ teaspoon red chili powder
1 teaspoon ginger green chilli paste
1 teaspoon sesame seeds
¼ teaspoon baking soda
1¼ or 1½ cups water
A pinch of asafoetida/hing
Take a bowl. Add all the ingredients and add water to form a thick batter. Batter should be of dropping consistency. Add water gradually as per the need. Whisk it properly so that there is no lump.
Take a dish and grease it with oil. Pour the mixture.
Steam it in a vessel or idli maker for 12-15 minutes. Insert a knife to check if it is done. If not then cook it for 2-3 more minutes.
Let it cool completely. Cut into squares or diamonds.
Take a pan and heat oil. Shallow or deep fry till crispy.
Serve it with chutney.
