Beans Uttapam

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serves: 4

Ingredients

3 cup idli batter/rava(semolina) batter

2 cup boiled rajma/kidney beans

1 cup finely chopped onions/shallots

1 cup finely chopped tomatoes

½ cup finely chopped capsicum/green bell pepper

1 teaspoon ground black pepper

1 teaspoon red paprika

2 teaspoon oregano

Salt

Oil

Method

Soak rajma beans for 8 hours and pressure cook it for 5-6 whistles in 3 glass of water. Drain water and keep it aside.

If you are using rava then, soak it in water for 10 minutes. It should be of thick consistency.

Take a bowl, add boiled rajma and slightly mash it. Add tomatoes, onion, capsicum, salt, oregano, black pepper, red paprika and mix it well.

Take a non-stick pan and heat it. Put 1/4 teaspoon of oil and spread a ladleful of batter evenly to make a circle. Spread rajma mixture on it and press it slightly with hands. Cook the bottom part. Drizzle some oil on the top and turn it upside down with a spatula. Cook it on the other side also on a low flame otherwise beans will burn.

Prepare all the uttapams like this.

Serve it hot with tomato ketch up and/or green chutney.
