![]() Corn-Capsicum Sandwich
Preparation Time: 15-20 minutes Ingredients 8 bread slices 1 cup boiled corn kernels ½ cup finely chopped capsicum/bell pepper 1 cup finely chopped onions 1 cup grated cheese 6 tablespoon butter Salt 1 tablespoon of ground black pepper 1 teaspoon red chilly powder(optional)
Method Take a pressure cooker, add 3 glasses of water and boil it. Add corn kernels in it and close the lid. Pressure cook it for 3 whistles. Let the cooker cool. Take out corn kernels in a colander and let the water drain. Keep it aside. You can also use ready boiled kernels. Heat 1 tablespoon butter in a pan. Add onions and sauté it till it turns it colour. Add capsicum, corn kernels, salt, pepper, red chilly powder and cook it for about 5 minutes on a low flame. Add half cheese. Apply light butter on all the bread slices. Take one slice and spread the corn mixture. Sprinkle some cheese. Cover it with another slice of bread. Prepare all the sandwiches. Toast or grill the sandwiches. Serve it hot with tomato ketchup and green chutney. |
