Method To make puris Take a bowl. Add flour, salt, pepper, oil and knead soft dough. Make small balls. Dip into flour and roll small puris of about 1 ½ to 2 inches diameter. Take tawa/griddle and roast it dry on both the sides. Don’t cook it fully as we are also going to grill it afterwards. Wrap it in muslin cloth and keep it aside. To make tikkis Take a bowl. Add mashed potatoes, carrots, beetroot, capsicum, ginger-green chillies paste, salt, pepper, chaat masala and mix it. Add tapkir and mix it well. Take about 2 teaspoon of this mixture and roll into the ball. Press it slightly with hand and make tikkis. If the mixture is too soft you can add more tapkir. Make all the tikkis this way. Take tawa/griddle and heat it. Add about 2 teaspoon of oil. Shallow fry all the tikkis on both the sides till light brown. To assemble the sandwich Take one puri, apply green chutney on one side, put one tikki, apply green chutney on it and close it with another puri. Prepare all the sandwiches like this. Take a pan or grill pan. Add about 2 teaspoon of oil and shallow fry all the sandwiches on both the sides till light brown.
