![]() Mexican Vegetarian Quesadillas Preparation Time: 20 minutes Cooking Time: 20 minutes Serves: 3 Ingredients 2 cup boiled rajma 1 cup finely chopped onions 1/2 cup finely chopped tomatoes 1/2 cup finely chopped capsicum/bell peppers 1 teaspoon garlic paste 2 tablespoon oregano 1 tablespoon ground black pepper 2 tablespoon tomato ketchup 2 cup grated cheese Salt Oil/butter
Method Take a pan and heat 2 teaspoon oil. Add onions and saute it for 1-2 minutes. Add capsicum, tomatoes, garlic paste, salt, pepper, oregano and cook it for a minute or two. Add boiled rajma and cook it for 2-3 minutes. Add tomato ketchup and mix it well. Take tawa and heat it. Add 1/2 teaspoon of oil/butter and flip tortilla on both the sides so that it is smeared with oil. Spread about 2-3 tablespoon of rajma mixture on half of the tortilla. Sprinkle cheese on top and fold the tortilla into half moon shape. Press it slightly. Cook it about half a minute or till the cheese melts. Prepare all quesadillas in this way. Serve immediately.
