Mexican Vegetarian Tacos

Mexican Vegetarian Tacos

Preparation Time: 30 minutes

Cooking Time: 40 minutes

Soaking Time: 7-8 hours

Serves: 4


To make Tortillas

1 cup corn flour (makai ka atta)

1/2 cup maida (all purpose flour)

1/2 teaspoon ajwain / carom seeds (coarsely ground)(optional)



To make the stuffing

1 cup boiled kidney beans

1 cup finely chopped onions

1/4 cup finely chopped tomatoes/3 teaspoon tomato ketchup

1 cup shredded cabbage/lettuce

1 cup grated cheese

1 teaspoon red chilly powder

1 teaspoon ajwain (carom seeds)


1 tablespoon butter

To make Salsa

1 cup finely chopped tomatoes

1/2  cup finely chopped spring onions (whites and greens both)

3-4 finely chopped green chillies

1 teaspoon red chilly sauce (optional)

1 teaspoon lemon juice

1 teaspoon oregano



To make Salsa

Combine all the ingredients and keep it in air tight container and keep it in the refrigerator.

To make Tortillas 

Take a bowl, add all the ingredients and knead dough. The water should be slightly warm. Keep it aside for 15-20 minutes.

Make 12-14 small balls and roll into plain flour and roll the tortillas of about 4-5 inches diameter. Prick it with a fork or knife.

Take a non - stick tawa and cook it on both the sides till it turns light brown. Wrap it in the muslin cloth to keep it warm.

You can use it immediately or you can wrap in zip lock bag and put it in the refrigerator. You can store it till 10-12 days.

You can have your choice of taco shells - soft tortillas or fried ones.

Take a kadai/wok and heat oil. Deep fry tortillas on both the sides and turn it into U shape while it is still hot. Your taco shells are ready. Keep it aside to cool it.

You can also use ready made tortillas/taco shells. Deep fry and use it immediately. If you want to use soft taco shells then put ½ teaspoon of butter on a tawa/skillet and cook it on both the sides for few seconds and fill it up with the stuffing.

To make stuffing

Soak rajma/kidney beans for 7-8 hours and pressure cook it for 5 whistles. Drain water and slightly mash it.

Take a pan and heat butter. Add ajwain, onions and saute it till it turns light brown. Add tomatoes and saute it for 2-3 minutes. Add salt, red chilly powder, rajma and mix it well. Cook it for 2-3 minutes more. Keep it aside.

To serve 

Take a taco shell, spread beans at the bottom, topping it up with shredded cabbage, salsa and cheese. Add chilly sauce if you like to have it spicy. Serve it immediately.
