Okonomiyaki (Japanese Pancakes)
Preparation Time: 15 minutes
Cooking Time: 20 minutes
3 cups shredded cabbage
1 cup grated carrots
1/4 cup grated potatoes
1/2 cup chopped spring onion whites
1 cup maida/refined flour
1 teaspoon baking powder
1/4 cup water
1 teaspoon finely chopped ginger
2 finely chopped green chillies
1 teaspoon ground black pepper
5 tablespoon mayonnaise for garnishing
4 tablespoon spring onion greens for garnishing
For Okonomiyaki Sauce
2 tablespoon soy sauce
2 tablespoon Worcestershire sauce
2 tablespoon red chilly sauce
2 tablespoon tomato ketchup
1/4 teaspoon ground black powder
1/2 tablespoon sugar
To make the sauce - Take a bowl. Add all the ingredients and mix it well till sugar dissolves.
To make pancake - Take a bowl. Add cabbage, carrots, spring onions, salt, pepper, ginger-green chillies paste and mix it. Add flour and mix it. Add water gradually as per the need.
Take a non stick pan/tawa. Put about one teaspoon of oil and pour about 1 ladle of mixture. Cook on both the sides till it is light brown in colour. Prepare all pancakes like this.
For serving - Place a pancake in a dish. Spread okonomiyaki sauce, mayonnaise, sprinkle spring onions and serve.
Note: This recipe is prepared with eggs which I have tried to turn it into vegetarian dish.
