![]() Potato Khidchi (Mashed Potatoes with Peanuts)
Preparation Time: 20 minutes Cooking Time: 10 minutes Serves: 3 Ingredients 6 big potatoes 1 cup roasted peanuts coarsely ground 4-5 finely chopped green chillies 1 teaspoon coriander-cumin powder 5-6 curry leaves 1 teaspoon cumin seeds 2 teaspoon lemon juice Salt 3 tablespoon oil
Method Boil potatoes. Peel the skin and mash it. Take a pan and heat oil. Add cumin seeds, curry leaves, green chillies and stir it for 2-3 times. Add mashed potatoes, coarsely ground peanuts, salt, coriander-cumin powder and mix it well. Add lemon juice and cook it on low flame for about 3-4 minutes, stirring occasionally. Serve it immediately. It can be eaten during vrat also. |
