Sama-Bottle gourd Patties

Ingredients

To make patties

1 cup sama(shama millet/moriya)

1 teaspoon ginger paste

2-3 finely chopped green chillies

1 teaspoon lemon juice

¼ cup finely chopped coriander leaves/cilantro

1 teaspoon cumin seeds

½ teaspoon turmeric powder

Salt

2 tablespoon of oil

 

To make stuffing

2 cup grated bottle gourd/lauki

1 teaspoon ginger paste

2-3 finely chopped green chillies

1 teaspoon lemon juice

½ teaspoon turmeric powder

Salt

2 tablespoon of oil

 

To make masala curd

1 cup curd/yogurt

1 teaspoon sugar

½ teaspoon red chilly powder

½ teaspoon coriander powder

Method

To make masala curd, take a bowl and mix all the ingredients well. Put it in the refrigerator to cool it.

Soak sama for about 3-4 hours. Drain water.

Take a pan and heat 2 tablespoon of oil. Add cumin seeds, 1 teaspoon ginger paste and stir it for 2-3 times. Add 1 ½ cup of water and let it boil. Add salt, ½ teaspoon of turmeric powder, sama, stir it, close the lid and let it cook on a medium flame.

Stir it occasionally to check it. If you think water is less then add about ½ cup of water. It depends upon the brand of sama you are using. Some need less water while some need more water. Cook it till it is done. Before it is done fully, add coriander leaves and stir it once. To check it, take sama in a spoon and press it with fingers and if it is soft and mashes properly then it is done. Mash it and keep it aside to cool.

Side by side in other pan take 2 tablespoon of oil and heat it. Add ginger paste, stir it and add grated bottle gourd. Add salt, ½ teaspoon of turmeric powder and sauté it till it is done. Let it cool slightly.

Grease your hands with oil. Take about 2 teaspoon of sama, press it with hands and put 1 teaspoon of bottle gourd mixture in between. Cover it from all the sides and make a patty. Prepare all the patties like this.

Take a non stick tawa, smear with oil and cook patties on both the sides till it turns light brown.

Serve it hot with masala curd.
