Vada Paun (Bread Bun with Potato fritters)

Vada Paun (Bread Bun with Potato fritters)

Serves: 3

Ingredients

6 bread buns

For Vada

3 big boiled potatoes

1 teaspoon ginger paste

2 teaspoon green chillies paste

1 teaspoon lemon juice

1 teaspoon garam masala (all spice)

6-7 curry leaves

1/2 teaspoon turmeric powder

Salt

For batter

1 cup besan (gram flour)

A pinch of cooking soda

1/4 teaspoon turmeric powder

Salt

Oil for frying

6 teaspoon Vada paun masala(Dry Garlic Chutney)


Method

Pressure cook potatoes for 3 whistles. Let the cooker cool, peel the skin of potatoes and mash it. Add salt, garam masala, lemon juice and mix it.  Take a tawa and heat 1 teaspoon oil. Add curry leaves, ginger-green chillies paste and stir it 2-3 times. Add potato mixture and mix it well. Let it cool. Make 6 balls from these mixture.

Make a batter by taking all the ingredients in a bowl. Add about 1/4 cup water and mix it well. Check the consistency of the batter. It should not be too thick.

Take a frying pan and heat oil. Deep the vadas/balls in the batter and deep fry. Put it on the absorbent paper to remove excess oil.

For serving - Take buns and cut it horizontally from the centre. Sprinkle vada pav masala(dry garlic chutney), place one vada in between and serve it You can even add tamarind chutney if you like it.
